15 oz canned peaches in Splenda & water
1 Granny Smith Apple, cored and chopped
1/2 c. fresh cilantro
3 TB honey
2 TB fresh lime juice
1/4 tsp allspice
1/2 tsp cinnamon
1/4 tsp cayenne

Dice peaches, apples, and cilantro.  combine with remaining ingredients in small bowl.  Cover and chill.

Zucchini Oatmeal Cookies

Zucchini Oatmeal Cookies (from Raquel's Just Desserts)


1 tsp ground cinnamon
1/4 tsp ground cloves
1/2 tsp ground nutmeg
1/4 tsp table salt
4 tablespoons light margarine
1/2 cup craisins
1 1/2 cups zucchini, grated
1 tsp baking soda
1/2 cup honey
1 egg
1 cup quick cooking oats
2 cup whole wheat flour

Cream margarine with honey. Add egg and beat well. Sift flour with soda, cinnamon, cloves, nutmeg and salt. Add flour mixture alternately with zucchini to egg mixture. Stir in oats and craisins. Drop by teaspoons onto greased baking sheets. Bake at 375* for 10 to 12 minutes.

Chicken Wings in Honey Sauce

Chicken Wings in Honey Sauce (from Slow Easy)

1.5 lbs chicken wings, no tips               
1/2 c. soy sauce
Salt & pepper to taste                         
1/4 c. ketchup
1 c. honey                                     

Spray 1.5 quart crock with cooking spray and place chicken in crock.  Combine remaining ingredients and pour over chicken.  Cook on high 1 ½ to 2 hours.
Yield: 5 servings= 315 Calories; 5g Fat (14.8% calories from fat); 9g Protein; 62g Carbohydrate; 1g Dietary Fiber; 24mg Cholesterol; 1814mg Sodium.

1.5 lbs chicken drumsticks
6 oz. frozen orange juice concentrate
3 Tbs honey
4oz can of green chilies chopped
1/4 tsp salt
1/4 cup finely chopped onion


Wash and place chicken in crockpot. Combine
remaining ingredients and pour over chicken.
Cook low 5 hours.

Spicy Pretzels

Spicy Pretzels

12 oz pretzel sticks                  1 TB reduced fat margarine,
3 TB honey                                           softened
1 tsp. onion powder                   1 tsp. chili powder

Line a 15x10x1 pan with foil, coat foil with cooking spray.  Place pretzels in a large bowl.  In a small bowl, combine honey, onion powder, chili powder and margarine.  Pour over pretzels; toss to coat evenly.  Spread into prepared pan.  Bake at 350* for 8 minutes, stirring once. 
Yield: 12 servings (1/2 cup)= 126 cals., .4g fat, 1g fiber, 27g carb, 3g protein,435mg sodium

Honey-Glazed Drumsticks

3 TB honey                                        3 TB Dijon style mustard
1 tsp. Lemon juice                           1 tsp. Orange peel
8 drumsticks

Stir together honey, mustard, lemon juice and orange peel.  Set aside.  Grill chicken on an uncovered grill directly over medium coals for 15 mins.  Turn chicken; grill for 20-30 mins more or until chicken is tender and no longer pink, brushing with sauce during last 10 mins of grilling.

Easy Honey Garlic Chicken

Easy Honey Garlic Chicken (from Quick & Easy)
 
1 pound uncooked boneless, skinless chicken thighs
4 cup frozen mixed vegetables
1/2 cup Kraft Zesty Italian Fat Free
2 Tbsp honey
dash ground ginger
dash garlic powder

Cook sliced chicken in large skillet sprayed with cooking spray on med. high heat 5 min. stirring occasionally.
Add vegetables, dressing, honey, garlic, and ginger.
COOK and stir an additional 5 min. or until chicken is cooked through and vegetables are heated through. Serve over rice.

Zucchini Bread

Zucchini Bread


1 egg                            
2 1/2 c. flour
1 egg white                     
1/4 tsp. baking powder
1/4 c. Canola oil                       
2 tsp. baking soda
1 c. nonfat plain yogurt                
3 tsp. cinnamon
1 c. honey                       
2 tsp. vanilla
2 small zucchini, shredded       
cooking spray

Coat two 4x8 loaf pans with nonstick spray.  In a large bowl, beat the eggs.  Stir in the oil, yogurt, honey, zucchini & vanilla.  In another bowl, whisk the flour, baking powder, baking soda and cinnamon.  Quickly, stir in egg mixture until well blended.  Pour the batter into the pans.  Bake at 350* (possibly 360*) until the center of each loaf springs back when lightly pressed with a fingertip, 40-45 mins.  The sides should be slightly brown and come away from the edges of the pan.  Set the loaves on wire racks and cool in the pans for 10 mins. 
Yield: 2 loaves, 10 slices each loaf= 145 cals., 3g fat, 1g fiber, 28g carb, 3g protein, 148mg sodium

 

 

Honey Grilled Sweet Potatoes

¾ lb sweet potato                            2 TB light margarine
3 TB honey

Preheat grill.  Clean sweet potatoes, cutting off any bad spots.  Cut into ½ “ slices.  Place on grill and cook for 8-10 minutes on one side.  Soften butter and mix with honey.  Spread mixture on slices and turn.  Continue grilling 6-8 minutes.  Turn and spread on more honey butter.  Continue grilling until honey butter gets all bubbly.
Yield: 4 servings= 138 cals, 3g fat, 2g fiber, 28g carb, 1g protein, 49mg sodium

 

Chocolate Peanut Butter Pie

 

Chocolate Peanut Butter Pie (from Raquel's Just Desserts)


4 TB peanut butter        
1 pkg. (4serving) chocolate, sugar free fat free pudding mix
1 TB honey                       
1 1/2 c. rice crisp cereal       
1 2/3 c. skim milk

Microwave peanut butter and honey for 20 seconds.  Pour in rice cereal; mix and pat into 9 inch pie pan.  Mix pudding and milk and pour over cereal mixture.  Chill and serve with FF Cool Whip.

Mustard Glazed Ham Steak

1 lb. Ham steak                                1 TB Dijon mustard
1 TB honey                                        1 TB sugar free apricot preserves

Grill ham steak on medium high for 4 minutes.  Turn over and baste with mustard glaze.  Grill another 4 minutes.  Turn over and baste with glaze and grill another 2 minutes.
